Week 6

In this week’s basket:

Ideas for this week:

  • salad with basil, peas, and raspberries
  • steamed beans, kale, or chard alongside boiled or roasted potatoes
  • or, if you are anything like us: raw beans and peas as a snack followed by the entire pint of raspberries

Ideas for this week:

  • potato salad with parsley and green onions – add a couple boiled eggs and your favourite dressing (ex. mayonnaise and hot mustard; lemon and olive oil)
  • quick and easy stir-fry: saute a few green onions, kale, spinach or chard, carrots, and sugar peas with soy sauce or with a few eggs; serve with rice or quinoa

Week 3

In this week’s basket:

  • snow peas
  • spinach
  • kale
  • bok choy
  • pea shoots
  • thyme
  • parsley
  • cilantro
  • green onions
  • choice of: tat soi, green peas, or rainbow chard

Almost all of this week’s vegetables go very well in a stir-fry. Add snow peas near the end of cooking so that they stay crisp. Spinach, kale, and bok choy all go well in omelettes, stir-fries, and soups; add them near the end so that they don’t get overcooked. Tat soi and rainbow chard are┬ásimilar and go well in all of the above. Try kale, spinach, and chard on top of your pizza or throw kale and spinach into a smoothie.

Ideas:

  • chicken or beef, spinach, and snow pea stir-fry over rice with pea shoots and cilantro on top
  • banana, berries, kale, and spinach smoothie (add milk or juice of juice)

Week 2

In this week’s basket:

Recipes

Arugula Salad

arugula
lettuce
pea shoots
dill
chopped nuts
stawberries (cut in half)

Toss everything together and drizzle with olive oil, balsamic vinegar, and maple syrup.

Mojito

10 fresh mint leaves
1/2 lime (cut into 4 wedges)
2 tbsp sugar
1 cup ice cubes
1 1/2 oz. white rum
1/2 cup club soda

Crush mint leaves and 1 wedge of lime in a sturdy glass. Add 2 more wedges, along with the sugar and continue to crush. Fill the glass with ice, pour the rum and club soda over top and stir. Garnish with remaining wedge of lime. Makes one serving.
